A resurgence of traditional English cuisine has taken place in the UK driven by celebrity chefs and the fast growing number of innovative restaurants. English cookery has been much maligned and has improved dramatically in the restaurants and country inns in the past decade. I prefer to see English cooking as an on-going thing that is constantly evolving.
With these many restaurants serving typical English foods such as a range of cheese and fresh fruit and vegetables, it has become more popular to enjoy traditional foods.
Yet, a love of foreign cuisine still prevails. After all, as basil, tomatoes and pasta define Italian cookery, so blackberries, leeks, bacon and oats define the British. Indian spices also changed British taste buds forever.
In fact the favorite English food, according to market research, is chicken tikka masala, an Indian dish that only exists in Britain.
Root vegetables, seafood, beef, liver, sausages, cheese, and bread play are large role throughout native English cuisine. Cheeses and dairy foods play a big part in British cooking too.
Who knows what the latest drive for a healthier "5-a-day" portions of fruit and vegetables will change the diet - more dishes are being created that are full of fresh produce to thrill the palate. Who knows, we may even one day shrug off the opinion that the French have of our cooking!?!
The seas around the British Isles provide UK tables with a rich catch and seafood features prominently on menus throughout the country. Today fish is still very important to the English cooking.
Puddings and custards enjoy a place of prominence in English cooking.
