Generally, Cajun food is the country/bayou food characterized by dark roux
(browned flour mixture), lots of animal fat, and very spicy flavors.
Roux
If you can't make a roux you can't cook Cajun food plain and simple. The dark
brown roux is the secret to traditional Cajun food because of the richness and
depth it adds to the dish. Its color begins where French roux ends.It is with
Cajun cooking that roux really comes into its own.
Generally, Creole and Cajun food is based on the browned-flour mixture, the
roux, that goes into gumbos, stews, etouffe, and other popular dishes. Creole
cooks ordinarily go for a light or medium roux, while Cajun food normally
depends on a darker roux with its heavy, smoky taste. The roux is the secret to
traditional Cajon food because of the richness and depth it adds to the dish.
Creole
In contrast to Cajun food, Creole food finds its origins from the aristocratic
plantation owners most of whom also came from France. Creole cooking is
more refined, milder and more subtle than Cajun cooking. Both have similar
gumbos, etouffees, jambalaya and other dishes but there are distinctions
between the two. Creole food is much spicier than Cajun food, because herbs
and spices were hard to come by in the country. Today, Cajun food tends to
be spicier and more robust than Creole, utilizing regionally available resources
and less foods gained through trade.
Gumbo
Try some spicy Cajun food , gumbo soup is a must if you haven't had it before.
Some of these foods are gumbo, jambalaya, crab imperial, and red beans and
rice. Crawfish bisque and crawfish etouffee, sauce piquante and andouille
gumbo are good examples of traditional cooking. Why not partake of some
traditional Cajun cooking, such as chicken gumbo, red beans and rice,
Andouille sausage and cornbread. For delicious and dirt-cheap cooking; try
the gumbo yaya of chicken, shrimp and sausage, and the fruit-and-potato
salad.
Pepper
Usually seafood-based, local cooking involves copious use of cayenne pepper.
The recipe also includes onion, garlic, celery and green bell pepper, a
combination frequently used in cooking. Instead, food is seasoned with salt,
black pepper, cayenne pepper, and a variety of other herbs.
True Cajun food is a blend of ingredients that could include garlic, onions,
bell peppers, celery and parsley to name a few.

CAJUN CHICKEN RECIPE
Cajun smoked, beer-can chicken.
Injection Ingredients:
1. A 3 or 4 pound chicken
2. 1/2 cup melted butter (room temperature)
3. 2 tablespoons of Tony Chachere's seasoning (more for a spicier chicken)
4. 1-teaspoon garlic powder
5. 1/2 cup vinegar
Rub Ingredients:
1. Olive oil
2. Tony Chachere's seasoning.
Mop Ingredients:
1. Apple Cider
2. A Spray Bottle
Other:
1. A beer of your choice (1/2 full)
2. 3 cloves of garlic
3. About 3 tablespoons of chopped garlic
Directions:
1. Whisk all injection ingredients together.
2. Using a kitchen syringe, inject the liquid into various spots on the chicken. Try to be even as possible, injecting about 1/2 of the mixture into the
breasts, and the other 1/2 throughout the rest of the chicken.
3. Rub the chicken down with olive oil, and apply an even layer of Tony's to the bird.
4. Drink half of the beer, widen the opening at the top of the can, then put the garlic and onion in the can.
5. Place the bird on the can. It should sit up by itself.
6. Preheat your smoker to about 250 F degrees. I use hickory for chicken, charcoal works well too.
7. Put the chicken on the smoker and spray the chicken with the apple cider about every 30 minutes.
8. Smoke the chicken for 3-4 hours, or until the internal temperature of the thickest meat reaches 180 F Degrees.
